Start with 8-10 pound pork butt.  Paste 2 1/2 tablespoons cumin, 2 1/2 tablespoons chili powder, 1/2 tsp ground allspice, 1/2 tsp ground clove, 2 tsp ground coriander, 1 tablespoon brown sugar, 1 tablespoon Arnold's Prairie Dust, 2 tablespoons crushed garlic, 1 tsp chipotle hot sauce.  5 tablespoons olive oil.

Make paste and reserve 2 tablespoons for sauce, apply paste to butt and let sit in fridge for 4-24 hours.  Smoke with a good mild wood to IT of 202 F and shred.

Cuban Mojo Pork

Sauce: 2 cups of orange juice, 1/2 cup lime juice, 1/2 cup lemon juice, (or one bottle of Goya Bitter Orange in place of the citrus) 1/2 cup of red wine, 1/3 cup of beer, 1/3 cup of rum. (think of the left over booze at this point). 1/3 cup of brown sugar, 1 tablespoon crushed garlic, 1 tsp crushed dried cilantro, 1 tsp black pepper, ground, 5 bay leaves, 20-30 garlic cloves (I know sounds like a lot but it is good) 2 tablespoons of mojo paste from above.

Bring sauce to a boil, reduce by half, stirring often.  Remove bay leaves and pour sauce over pulled pork and let rest for 1 hour.  Serve on good bread. I like to use a crock pot on low.
